Homework Assignment: The Exam 

Part 1 – Write your 5 course plant based 100% organic tasting menu, shopping list and food preparation list.

Part 2 – Do your menu cost analysis to establish cost price and appropiate sale price for the tasting menu with appropiate profit margin.

Part 3 – Based on your menu do up a mock projected profit and loss report based on serving your menu in a restaurant or cafe. Report must include staff costs, premises cost, and other appropiate costs.
